These delicious snacks are perfect for an afternoon of games celebrating Easter. The best thing about them is they’re healthy and easy to make. The kids of the house, and the “wannabe kids again”, will love them…After all, they’re Easter bunny approved 😉

CARROT CHIPS

INGREDIENTS

6 carrots peeled and sliced thinly
1 tablespoon kosher salt
½ tablespoon of black pepper
½ tablespoon garlic powder
avocado oil spray

PREPARATION

In a bowl, add the sliced carrots and spray them lightly with avocado oil.

Sprinkle them with salt, pepper, and garlic powder and mix them until all the carrots are seasoned.

Spray the air fryer basket with avocado oil before adding the carrots. Then, add half of the carrots to the fryer. Note: we will probably need to fry the carrots in smaller batches depending on how crispy we want them. Set the air fryer on 390° and cook for 8 minutes, then shake the basket, spray more oil if a crispier texture is desired and continue cooking for another 8 minutes or until the desired result is achieved and enjoy!

CHOCOLATE COVERED BANANAS

INGREDIENTS

4 bananas
8 popsicle sticks
4 bars of dark chocolate without sugar
2 tablespoons coconut oil
Toppings: grated coconut, chopped walnuts and/or almonds

PREPARATION

Cut the bananas in half. Carefully insert the popsicle sticks halfway in the middle of each piece of banana. Leave the bananas in the freezer for 10 minutes on a tray with  parchment paper. Next, melt the chocolate bars in a bain-marie, add coconut oil and stir until fully melted.

Once the chocolate has melted, take the banana halves out of the freezer; dip them in the chocolate and cover them with the topping of your choice until the bananas are fully covered (or as desired). Hold them for a few seconds until the chocolate hardens a bit and place the bananas back on the tray. When finished, put the tray with the bananas back in the freezer for an hour. Take them out and enjoy!
