Pan de muerto (traditional recipe)
If you love sweet bread, especially “Pan de Muerto”, but you like to eat healthy, this recipe will be your go-to this season. Enjoy it with a delicious cup of hot coffee while you celebrate Day of the Dead honoring your loved ones with your family.
INGREDIENTS
- 4 and 1/2 cups oat flour
- 3/4 cup stevia
- 1 tablespoon baking powder
- 1 tablespoon orange juice
- 1 cup avocado oil (or coconut oil)
- 2 tablespoons orange zest
- 2 cups coconut milk
- Salt
PREPARATION
Preheat the oven to 350ºF. In a small pot, heat the milk and avocado (or coconut) oil for a little bit and remove from the heat. Grab a bowl and begin by adding the flour, make room in the center of the flour and pour in the stevia, baking powder, orange zest, juice and a pinch of salt. Then, add the milk and oil previously heated.
Knead the flour with a dough mixer or by hand. Once you mix it well, grease a bowl with avocado / coconut oil and pour the dough into the bowl. Cover the bowl with plastic and leave it for an hour until the dough puffs up.
On a baking tray, place balls of dough to shape the bread. For the top design, make strips of dough to decorate the bread with the shape of a cross. Place it in the oven and let it bake for about 25-30 minutes or until you pinch the bread with a fork and it comes out clean.
Take it out of the oven and slightly brush each bread with a little bit of avocado / coconut oil. Sprinkle a little stevia on top and that’s it. Enjoy!
