Ingredients

3 eggs

30 g butter

30 g grated cheese

¼ onion

4 large mushrooms

Salt and pepper

Preparation

Break the eggs and add them to a bowl with a pinch of salt and pepper. Beat them with a fork until smooth and frothy. Melt the butter in a skillet over medium heat. Add the mushrooms and onion to the skillet, stirring until tender, then pour the egg mixture around the vegetables. When the omelet begins to cook and firm, but is still somewhat raw on the top, sprinkle the cheese over the eggs. With the help of a spatula, carefully take one of the edges of the omelet and fold it in half. When it begins to brown underneath, remove the pan from the heat and slide the omelet onto a plate.
