INGREDIENTS

  • Cooked quinoa, one cup
  • 3 cups egg whites
  • Spinach, amount to taste
  • 4 stalks of green onion, diced
  • 1 red pepper, diced
  • 1 cup feta cheese, crumbled
  • Black pepper
  • Sea salt
  • 2 lemons
  • Crushed red pepper
  • Olive oil
  • Pam, olive oil
  • Muffin pan

PREPARATION – Time: 45 minutes

Preheat the oven for 10 minutes at 375 degrees.

Mix the quinoa, egg whites and vegetables in a bowl. Spray the pan with Pam to prevent the mixture from sticking. Pour the mix into the pan without filling to the brim to prevent the mixture from running. Bake for 40 minutes.

Dressing: Mix the olive oil with the lemon juice, sea salt, cracked pepper and crushed red pepper to taste.

Serve each quinoa cake with a bit of feta cheese on top and garnish dressing to taste.
