Blueberry Biscotti

INGREDIENTS

1/2 cup softened butter                                                                            1/4 cup stevia

2 eggs                                                                                                            orange zest

Salt                                                                                                                 2 cups of whole wheat flour

1 and 1/2 tablespoons baking powder                                                    unsweetened dark chocolate pieces

1 cup fresh blueberries                                                                               1/2 cup walnuts and almonds

2 tablespoons coconut milk.

PREPARATION

We preheat the oven to 350 F. We take a baking sheet and line it with aluminum foil. In a bowl with a mixer or by hand, beat the butter, add the orange zest, stevia, coconut milk and salt. We continue beating and add the eggs, flour, baking powder and continue beating.

We empty the blueberries into the blender, add a tablespoon and a half of almond flour and press the blender only once and quickly so as not to blend the blueberries so much. Chop the walnuts and almonds and add them to the dough.

We flour our hands and the outside of the dough, with our hands we begin to form a long strip of dough on the baking sheet until we finish the dough. We put it in the oven and let it bake for about 35-40 minutes, checking with a toothpick that it is well cooked. When it is ready, let it cool a little, cut all the bread into slices with a serrated knife, place the slices on the baking tray and bake for another 15-20 minutes until golden and crispy.

We let the bread cool and melt the chocolate pieces in a double boiler. We cover the breads with a little melted chocolate and that’s it, accompany them with a coffee or hot chocolate!

Chocolate truffles

INGREDIENTS

12 pitted dates                                                                           1/2 cup walnuts and almonds

3/4 cup almond flour                                                                 1/4 cup unsweetened cocoa powder

1 tablespoon vanilla                                                                    1/2 tablespoon salt

cocoa, chopped nuts and coconut flakes to decorate

PREPARATION

We put water to heat without letting it boil in a pot, we put the dates to soak for a few minutes to soften them. We drain and dry the excess water. In the blender we add the walnuts, almonds and cocoa. We blend until they are finely ground. Add the dates, the tablespoon of vanilla and the salt until a thick dough is formed.

We remove the dough from the blender and begin to form balls with the dough of the desired size, we cover them with grated coconut, chopped nuts or cocoa to decorate. We place the balls on a tray and refrigerate for an hour, take out our truffles and enjoy!

Pecan pie bars

INGREDIENTS

2 cups almond flour                                                                              4 tablespoons unsweetened maple syrup

4 tablespoons butter, melted                                                              1 tablespoon vanilla extract

¼ tablespoon salt

(For the filling)

½ cup butter, melted                                                                               1 tablespoon powdered monkfish

4 tablespoons unsweetened maple syrup                                            ¼ cup coconut milk

1 tablespoon vanilla extract 2 eggs

2 cups of chopped walnuts

PREPARATION

Preheat the oven to 350 degrees, cover a baking sheet with aluminum foil. In a bowl, add the almond flour, the 4 tablespoons of butter, the 4 tablespoons of honey, the tablespoon of vanilla and the salt. We mix until we form a thick dough. Spread the dough on the baking sheet and bake for 20-22 minutes or until the dough turns golden brown.

We remove from the oven and begin to make the filling, in a bowl we add the ¼ cup of melted butter, the monkfruit, the maple syrup, the vanilla extract, the coconut milk and the eggs. We beat everything well and add the walnut pieces to the mixture, pour the mixture into the dough that we baked in the beginning and put it back in the oven for about 30 minutes.

We remove from the oven, let it cool and with a knife we ​​cut into bars. To serve, add a pinch of salt to the bars and enjoy!

Olive and mozzarella penguins

INGREDIENTS

30 pitted black olives

15 mozzarella cheese balls

Chopped carrots to decorate the beak and legs

PREPARATION

Place a large olive, with the large hole facing forward, put a piece of carrot inside the olive to simulate the beak.
